Carol Belmonte’s Peanut Butter Thimble is just about my favourite food ever. No contest. You have to try one to really understand what I’m talking about. It’s almost impossible to explain the chocolately goodness with the creamy, decadent peanut butter centre of this work of art.
Each Thimble measures about 2.5 inches high and about an inch wide (from memory only since it’s never in front of me long enough to really measure accurately), and although this sounds small, it is a perfectly indulgent size of awesomeness.
Entirely raw, vegan and organic, it’s actually healthy, but I promise that it doesn’t taste that way for anyone who thinks raw vegan stuff isn’t good. It’s my birthday today, and the first thing I chose to eat this morning and it was this most-amazing-celebration-worthy-impromptu-cake.

Note: She also makes a Raspberry Ganache Chocolate if you don’t like peanut butter or if that is more your thing. But they are all cashew based, so if you have a nut allergy this is NOT for you. Sorry. (my sister doesn’t get to indulge. boo.)
